One of My Favorite Chicken Quinoa Recipes-Just Like Fried Rice But Healthier

chicken quinoa recipes 0 - ready to eat 1.0I was after a quick dinner the other night as we were going out to a function where I knew that there would be alcohol but not much in the way of decent food. It was catered but, having been to a similar event; I knew that it would all be prefabricated junk food that tasted bad that would be full of additives and seriously fattening.

Not wanting to drink on an empty stomach, I looked for something that was easy to make and that would give me some good protein and a few veggies. Then, I remembered one of my favorite chicken quinoa recipes that could be whipped up in minutes. Here’s the recipe:

 

Ingredients:

2 cups of quinoa that has been cooked in chicken stock (see hint below) 

6 green onions finely chopped (reserve 2 tablespoons for garnish)

1 medium yellow onion finely diced

2 cloves of garlic

1 green bell pepper, finely diced

1/2 a cup of celery, finely sliced

1/2 a cup of carrots, finely diced

Handful of chopped fresh basil, coriander or a mixture of both

1 finely chopped red chili (optional)

2 eggs lightly beaten

4 tablespoons of tamari soy sauce

2 teaspoons of sesame oil

Optional Additions:

1 cup of either lightly fried tofu, cooked bacon, cooked chicken or other cooked meat.

 

Hint:

When I am in a hurry and don’t have fresh chicken stock I use a product called “Better that Bullion”. It is an organic concentrated stock base that I get at our local Co-op. It’s not as good as the real thing but is great if stuck and in a hurry. It is in a paste form and for this recipe I dissolved a teaspoon in a couple of tablespoons of boiling water and added it at the same time as the soy sauce.

 

Method:

In a large pan or wok gently fry the green and yellow onions until just soft.

Add the garlic, celery, carrot, bell pepper and optional chili and stir-fry over medium heat for 2 to 3 minutes.

Scoop the mixture to one side of the pan and pour the beaten egg into the other side. Don’t worry if they get a bit mixed in together.

Scrambled the eggs gently until almost cooked, and then combine with the rest of the ingredients in the pan.

Add the soy sauce, sesame oil and chili.

Serve sprinkled with the reserved chopped green onion.
