I was just about to make some duck soup and as I got ready to cut an onion in half, it reminded me of all the times in the past when I have bought an onion just to cut it open and realize it has a strong and unpleasant odor, or even worse, it ends up being brown and nasty in the middle. However, there is a simple way to avoid this, and I want to share it with you today.

When you are selecting onions, always squeeze them very firmly using your entire hand, and they should feel about as hard as an apple.

Even if the outside feels hard, squeeze them a little at the top because sometimes you will find that they are good, but all the middle bit is brown and discolored. Squeeze them like this:

It’s as simple as that, just squeeze them firmly and if they feel like an apple, throw them in your bag. If they don’t, if they are squishy at all, throw them back in the bin.
